Aubergine Amaranth Salad

Ingredients
  • 4-5 Aubergine, cut into long stripes
  • 1 no mango, cut into small cubes
  • ½ cup pomegranate
  • 4-5 tbsp Amaranth, cooked
  • 2 tbsp parsley, chopped
Dressing:
  • ¼ cup soy yogurt
  • ½ tsp cumin powder
  • ¼ tsp paprika/ chili powder
  • Salt as taste
Method:
  1. Grill aubergine with little oil. keep aside.
  2. Make mixture using all dressing ingredients
  3. Now add all other ingredients except aubergine to dressing
  4. Roll up grilled aubergine & mix stuff it with above mixture.
  5. Serve immediately
