			Ingredients
				
- 4-5 Aubergine, cut into long stripes
 
- 1 no mango, cut into small cubes
 
- ½ cup pomegranate
 
- 4-5 tbsp Amaranth, cooked
 
- 2 tbsp parsley, chopped
 
	         
            
						
            Dressing:
- ¼ cup soy yogurt
 
- ½ tsp cumin powder
 
- ¼ tsp paprika/ chili powder
 
- Salt as taste
 
			  
			
		
			        
		
			       
		 
				
			Method:
- Grill aubergine with little oil. keep aside.
 
- Make mixture using all dressing ingredients
 
- Now add all other ingredients except aubergine to dressing
 
- Roll up grilled aubergine & mix stuff it with above mixture.
