Asian Sambal Baked Fish

Ingredients
  • Sambal Spice
  • Onion 150 Gm
  • Garlic 150 Gms
  • Red chilli 100 Gms
  • Cashew nut  100 Gms
  • Tomato  100 Gms
  • Fish sauce 20 Ml
  • Lemon juice to taste
  • Lemongrass 60 Gms
  • Palm sugar 40 Gms
  • Broth powder 20 Gms
  • Red snapper steak / Seabass – 1 no -150 Gms
Steps

1. Pound in a mortar pestle to make a paste (Sambal Spice, Onion, GarlicRed Chilli, Cashew Nut, Tomato, Fish Sauce, Lemon Juice to taste, Lemongrass, Palm Sugar, Broth Powder).
2. Marinate fish with sambal spice heavily and wrap it in banana leaf.
3. Now bbq it on hot charcoal or bake it in the oven for 8 min @160 degree.
